Ingredients (4 persons' portion)

4 potatoes
180 to 200 g of aibiki meat (ground beef and pork)
1 onion
30 g butter
1 egg
flour
pinch of salt and pepper
dried breadcrumbs
oil for frying
  1. Peel the potatoes and cut into pieces. Boil until soft.
  2. Chop the onion finely. Saute in butter until lightly browned. Add the aibiki meat, and fry until the meat becomes dry and crumbles.
  3. Drain the potatoes and place them in a bowl. Mash with a pestle or masher.
  4. Add the meat mixture prepared in 【2】 to the mashed potatoes. Season with salt and pepper. Divide into serving-sized portions and shape into ovals.
  5. Beat the egg in a bowl and add enough flour to make a thick batter—like for pancake batter. Sprinkle on salt and pepper.
  6. Coat the oval portions in the batter prepared in 【5】 and then in the dried breadcrumbs. Deep-fry in the oil at 160 to 180 °C. Serve hot.

Point & Advice

If you make a stock of mashed potatoes prepared as in 【3】, you can enjoy a wide variety of croquettes. You can season them with curry powder for curry-flavored croquettes or mayonnaise for potato-salad-flavored ones. Try various flavored croquettes.
A mouthful-size croquette is as easy to eat as it is to cook.
